Chicken & Broccoli Fettuccine Alfredo

Chicken and broccoli fettuccine alfredo is a dish that is surprisingly very simple to make (only 5 ingredients) and so delicious it will make you want to go home and slap your momma. *Of course, that is a figure of speech. No one should ever consider slapping one's mother. Comfort food at its finest. This is one of my favorite Italian dishes. I love Italian food so much, not quite as well as French food, but it is still a warm welcome change to the beefy meals I generally whip up.


This recipe is ideal for a slow cooker or a crockpot, one that will accommodate three quarts. I opted for a crockpot. This recipe will serve four and take approximately two hours to cook (add 10-15 minutes of prep-time).



Ingredients:

  • ½ cup of shredded cheese – mild cheddar

  • 1 lb. of boneless chicken breasts – skinless

  • 10 ¾ oz. of cream of mushroom soup

  • 8 oz. package of noodles – Any type will do. Goes best (in my opinion) with Linguine or Tagliatelle noodles

  • 1 ½ cup of fresh broccoli

Optional ingredients

  • Small carton of fresh mushrooms – Oyster, shiitake, cremini

  • 1 tbs of extra virgin olive oil – Won’t need if you use a non-stick skillet. I use stainless steel or cast iron.

Let’s get cookin’


First, wash and chop the broccoli and set it aside for now. Go ahead and cook the pasta according to package instructions. Four minutes before the pasta is done, add the broccoli. Cook for four minutes then drain.



While the pasta is doing its thing, cube the chicken breasts. Heat a tablespoon of olive oil in a skillet, then sauté the chicken until it is no longer pink in the center. Place onto a paper towel(s) and pat dry.



Combine the pasta, broccoli, and chicken into your slow cooker or crockpot. Add in the cream of mushroom soup and the cheese. If you are using fresh mushrooms, add those too. Cook on low for approximately two hours and the cheese should be melted.



Ahh, in two hours you will have something extraordinary to look forward to. In the way of side items, I would consider a nice salad and some garlic bread.
