Soothe the soul with a bowl of this scrumptious chicken soup. Guaranteed to make you feel cozy on these cold autumn evenings.
Nothing says fall time quite like a delicious bowl of soup. I am a new soup fan. For a long time, soups were so far down on my list that I often questioned if I was really southern. I have since come to embrace it and am always on the lookout for new and creative ways to use fresh garden veggies.
"It's soooo good"
I really love this recipe; it is simple to put together and very delicious. Honestly, I can't say it is my favorite, even so, it is very good and I know you and your family will enjoy it. Grab a medium-sized Dutch oven and we'll get started. Here is what you'll need to make the magic happen.
Ingredients
4-5 Russet potatoes diced
1 can of sweet corn
3 carrots
2 small cans or 1 large can of cream of chicken soup
a couple of handfuls of fresh green beans
a couple of handfuls of fresh snap peas
1 lb. package of sharp cheddar cheese
4 cups of cubed chicken breasts (about 3 good sized breasts)
2 cups of chicken stock
1 1/2 cups of water
Prep & Steps
You will need to scrub your hands first
Wash and trim the chicken then slice it into cubes.
Scrub, peel, and slice the potatoes into cubes.
Wash the green beans and peas & clip the ends off & slice into halves or thirds
Wash and peel and slice the carrots
Open the cans of soup and corn & drain the corn
Cube the cheese
Add everything except the cheese to the Dutch oven; chicken, potatoes, soup, stock, water, veggies. Bring it to a boil and allow to simmer for 8-10 minutes. Then add the cheese, cut the heat, you don't want to boil the cheese. Cook it until the cheese melts.
Total cooking time is roughly 30 minutes and this will serve approximately 8 people. This goes great with crackers or dipping bread. I opted for some garlic bread.
